Summary

Lead the floor during assigned shifts. Deliver smooth service, control ticket times, support cash-up, and hand over to the Restaurant Manager.

Duties and Responsibilities

  • Pre-shift: briefing, section plan, reservations/WAIT list, specials & 86 list, safety check.
  • Service control: seat/turn tables, monitor ticket times, coordinate with kitchen/bar, handle complaints on the spot.
  • People: assign tasks (waiters, runners, cashier), coach on the floor, manage breaks, do quick refreshers.
  • Cash & POS: support cashier with void/refund controls, comps/discounts per policy, Z-report review.
  • Standards: table resets, side work, cleaning roster, FOH stock (napkins, condiments, cutlery, glassware).
  • Hygiene & safety: enforce handwashing, spill response, incident log; escalate hazards immediately.
  • Comms & handover: accurate shift handover to RM (issues, VIPs, shortages, maintenance).
  • End of shift: checklist sign-off, variance notes, lock-up support.
  • Authority: stand down staff to correct grooming/hygiene; approve minor comps per limit; escalate bigger issues to RM.

Job Requirements

  • 2–3 years FOH lead/supervisor experience in busy restaurants.
  • POS confident; can review Z-reports and handle simple variances.
  • Clear English/Tok Pisin; calm under pressure; fair and firm.
  • Basic Excel/Sheets; simple rota understanding.
  • Fit to be on feet and lift up to 15–20 kg safely.
  • Grooming & Hygiene (FOH): clean pressed uniform (spare shirt), daily shower & deodorant, fresh breath, no strong scents, hair neat/tied back, short clean nails, minimal jewellery, closed non-slip shoes; no smoke/vape odour. May be stood down to correct.

  • Hours & breaks (PNG law)
  • Roster: nights/weekends/public holidays as needed; one peak per day typically covered by RM, the other by Floor Supervisor.
  • Compliance: enforce food safety basics at the floor (cleaning schedule, sanitizer stations, allergen notes, spill controls).
  • Reporting: reports to Restaurant Manager; supervises cashiers, waiters/waitresses, runners during shift.
