Duties and Responsibilities

Menu & specials; recipe/portion standards; plating guides.
Lead grill/oven/sauce stations; run the pass.
Prep plans, stock counts, ordering; track wastage.
Hygiene and safety logs; audit readiness.

Job Requirements

7+ years in Western kitchens; 2+ years as Head/Sous Chef.
Mastery of grilling, roasting, sauces, and pasta.
Costing skills and team leadership.

Others

Hours & Overtime as per PNG law.
Strict food safety and H&S compliance.
Training/succession of PNG staff; records maintained.
Reports to: Restaurant Manager.
