Summary

Deputise for the Head Chef; run line/pass and uphold standards.

Duties and Responsibilities

  • Execute prep lists; taste checks; pass control.
  • Train juniors; enforce recipes and portions.
  • Receive and store deliveries; labels/dates/FIFO.
  • Assist ordering, stock counts, and reports.

Job Requirements

  • 3–5 years in Asian kitchens with strong line management.
  • Organised, fast, and clear communicator.
  • Basic costing and ordering.

Others

  • Hours & Overtime as per PNG law.
  • Food safety and H&S compliance.
  • Reports to: Head Chef — Asian; covers when Head is off.
